Marinated Bean Salad
Recipe from Karen Gambrell
Ingredients:
- 3/4 pound green beans
- 1 cup shelled edamame
- 1 can kidney beans
- 1 can navy beans
- 2 green onions
- 1 Tbsp. chopped basil
- Diced Tomatoes
Dressing
- 1 Tbsp rice vinegar
- 1 Tbsp fresh lime juice
- 1 tsp honey
- 1 tsp brown or Dijon mustard
- 2 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
Directions:
- Cut green beans into thirds. In large pot bring about 1" water to a boil. Add the green beans and edamame, cover and steam until tender about 5 minutes. Drain and rinse with cold water.
- Combine edamame, green beans, kidney beans, navy beans, chopped onions, tomatoes and basil.
- Whisk together dressing ingredients.
- Pour dressing over bean mixture and add salt and pepper.
- Serve chilled.
